My answer -- not as cleverly put as jdaniel's, alas.

Before the mid-19th century, musical instruments were different, and music was written with those instruments in mind. Also, performance spaces were generally smaller. And of course, there was no electrical amplification or recording.
All of that made a big difference, and without deciding whether it is desirable or even possible to perfectly recreate the sound of a much earlier era, it can be worthwhile to hear something close to what it must have been like. But one can't excuse a bad performance by calling it authentic or HIP.
