RE: Bit depths. I am lacking some understanding.

Running the risk of opening Pandora's box (or restating what others have said in a different way): Dynamic range and S/N ratio are not one and the same.

With analog outputs the dynamic range usually exceeds the S/N range. In all likelihood your 100db S/N analog output has a dynamic range greater than 100db.

Now the question is: how acceptable is the mixed signal+noise? That is a question with lot of different answers depending on the type of noise your analog output creates; the type of music you are listening to; how much noise is in the signal before it gets to the analog outputs; the ambient noise in your room; what you are willing to put up with; etc. etc. etc.
