My experience is that the lower priced HT receivers tend to sound harsh on the top end and shy on the bass. That's just my experience and I freely admit that I have an acute sensitivity to top end harshness. I've listened to gear and complained that it's harsh where my friends have said they disagree.
At a given price point you'll likely get much better sound with a two channel receiver, integrated amplifier or power amplifier.
Pro stuff is always an option. I have never heard any pro amplifiers in an audiophile system so I can't comment on it. There is plenty of discussion on the audio boards about how great specific models are so do your research and decide for yourself. Remember a lot of pro gear uses 1/4" jacks instead of RCA jacks. It's not a huge problem but it means you are not likely to be trying out too many different cables.
