Snake oil is a euphemism for "I couldn't hear any differences".
Blind testing can remove sighted biases but it also tends to remove small audible diffrences, hence the "amps all sound the same" claim.
Read some of the literature - from Jon Risch and Robert Harley - about the problems with blind testing.
It is a tool which can be used but not the definitive method you may think it is.
