Pretty amazing!
But mostly for pet food.
We had a friends French parents visit a few years back and I did a special bbq for them - prime kangaroo fillet. Rested, seared, low roasted. It was stunning! It was from our high end butcher and cost more than A grade beef eye fillet.

Kanagaroo is cheap pet food meat, but when it is harvested for human consumption it gets very expensive - most Aussies won't eat it, so it is still a niche product.

Well, not all Aussies do, but a well prepared kangaroo fillet can be truly amazing.
Somewhat similar to venison.

Is their a season when they can be hunted like deer in America? And what is considered a trophy?

Season is all year round. No trophies. They are all mostly dogmmeat.

Our vet recommended kangaroo or alligator for our dog. She has some digestive issues. She loves kangaroo. Is very lean, low in fat and easily digestible.
