Went to a local Sechuan restaurant last night and ordered dry fried bullfrog.
Wow! is all I can say. The little bones are pesky, but the meat is sweet and tasty. It contrasted fabulously with the chilli!
I remember having frog legs in French restaurants but completely forgot about them in a thread below about gator meat and other reptililian delights.
Bullfrog is highly recommended!

Pretty amazing!
But mostly for pet food.
We had a friends French parents visit a few years back and I did a special bbq for them - prime kangaroo fillet. Rested, seared, low roasted. It was stunning! It was from our high end butcher and cost more than A grade beef eye fillet.

Kanagaroo is cheap pet food meat, but when it is harvested for human consumption it gets very expensive - most Aussies won't eat it, so it is still a niche product.

Well, not all Aussies do, but a well prepared kangaroo fillet can be truly amazing.
Somewhat similar to venison.

Is their a season when they can be hunted like deer in America? And what is considered a trophy?

Season is all year round. No trophies. They are all mostly dogmmeat.

Our vet recommended kangaroo or alligator for our dog. She has some digestive issues. She loves kangaroo. Is very lean, low in fat and easily digestible.

In my younger days, frog legs were packaged and sold at the chain supermarkets .
A guy up the street from me, on the less regulated side of the street , where it was legal to just build your house without inspection, A horse lived in a corral , and the house on the corner had a guy who farmed frogs for meat.
The neighbors were scandalized when the police arrested him for animal cruelty , harvesting the legs and then letting them grow back to be harvested again.
in the early 80's where the owner decided we would serve frog's legs.
We only carried fresh product so he ordered a case of live frogs.
They showed up, the manager (fretting but finally) killed one, the legs were
cut off and fried, shared amongst us that wanted to try some.
The rest of us refused to kill any frogs, fish mongers or cooks.
The owner showed up later in the day, took a look at the box o' frogs
(NOT the Yardbirds spin off), realized he too would not/could not kill any
frogs, and the manager released the remainder of the frogs at Stow Lake
in GG Park on his way home that night.
No one there EVER discussed the Day of the Frogs again AFAIK.

According to me, bull frog is by far the best of the bunch of reptiles I've eaten so far.
In New Caledonia we had sea turtle stew, like a stroganoff.....
The sea turtle was pretty tough.
Only the bloody Frenchies have the balls to serve sea turtle at a diving resort ;-)

Way to introduce an invasive species! Bullfrogs are native to the U.S. EAST of the Rockies only. Here in the western states they have become a serious predator of native species, including smaller frogs and the endangered Western Pond Turtle. They also spread diseases which infect native amphibians. Hunting them is encouraged, and there is no tag limit. See link.
Likely wiped out those 20-30 frogs before the sun rose the next day.
Either that or folk living in GG Park (NOT a new trend) enjoyed frogs legs gratis.
Possibly even gratin.

I dont think you could go to a pond, stream, creek, river or lake around here and there not be bullfrogs. They lay a tremendous amount of eggs, with the majority get eaten by the fish. But if only 20 survive, before long there are bullfrogs everywhere.
Entirely the opposite story to a friends daughter who was on echange in South America and the pet guineapigs definitely did end up on the table.

Is fairly common around here. Float a river at night with strong spotlights, a long pole with a sharp trident on the end of it. They keep the legs and load the freezer. Some people spotlight and shoot with a pellet gun or a .22 round. 50 frogs an evening is pretty common.
If you cook them up right, they are beautiful!

I agree, I've eaten them many times.
at least that's the claim for frog legs. :)
Sweeter, softer, finer.
