I am considering moving the power supply into a box separate from my monoblocks, but wonder if there are special requirements (wire size, shielding, special connectors, etc.) required to do this safely. Does anyone have experience doing this? Thanks

No need for a Mono Block Power amplifiers. It is no S/N Ratio problem in Power amplifier. Seperated power supply for a Phono stage is good idea but not for Power amps. Yes ! Wire Gauge want bigger , may No 16 or upper in tube amps. Keep the distance short ! So Keep it in a Chassis is better.
That's funny joseph, 2 of the best tube amps manufacturers out there have no problems what-so-ever with separate power supplies on their power amps. (Both Jadis and Tube Research Labs).Actually, doesn't Manley also use a separate power supply on their huge 1250 Watt Wonton amp?
What problems are you thinking of?
Beware of doing this, since the added reactance of the resulting wires may have a detrimental sonic affect. This is especially true in power amplifers were the current demands can be substantial during transients. Typically the reason for the monoblock design is to provide optimization of the power supply, by allowing room for a stiffer design.
