What wiring is a good choice to wire the filaments? I need to run 6.2v DC to two 12au7 and an 12au7. Will any stranded 18 gauge suffice as hookup wire?

#18 guage is more than ample to carry the DC current.

You might want to consider twisting the pairs to about two twists per inch to help minimize hum.

Well, if you're using DC filaments you don't have to worry about it.
If you're using AC for the heaters, running wires in straight pairs can induce 60hz hum that will be heard in the speaker. Not to say it will happen, but to say it can happen. It's best to twist the wires. This is standard construction procedure, but some people don't do it. that's ok. People can do it any which way they want to.
I know a guy who uses solder to glue the wires to the terminals rather than just to hold the good mechanical connection tight. Everyone does things their own way.

I was just kidding you. I once made some interconnect cables without shielded cable... just braided lead, ground and chassis ground. Ten feet long and no hum at all. Unfortunately, I found the 10pf capacitance to be unsettlingly low.
