You raise a very very very significant point about the very nature of stereo recording and playback. "Accuracy" dies at the microphones and get's buried further after that in the mix and post production.

Stereo recording and playbackwasnever designed to be a literal transfer of an original acoustical event. It's at best an attempt at creating an aural illusion of one.
