Makes me wonder if its the vinegar that's doing the work.
I've heard that it's the acidity of the tomato, though your theory also sounds good.
In India, people use tamarind to clean copper utensils. Tamarind looks like dates after shelled and is sour, sort of acidic. used in Indian cooking a lot.
