Is that recording still available?
Franck’s PC&F is an extremely difficult piano composition to get it right, it is a piano composition with proportions fit for a pipe organ music, many great pianists have tried but failed, producing spectacularly bland and fragmented performances, notable among them is Arthur Rubinstein’s recording of the piece.
My first exposure to this composition was a recording by Witold Malcuzinski some 50 years ago, a great performance indeed, presently I have several recordings, the most successful is a recording by Murray Purahia but I need to get my hands on Ivan Moravec if still available.
In addition to PC&F if you want to hear Franck at his best try his organ compositions, there is a two CD set of his organ works performed by J. Guillou on Dorian label in a demonstration quality sound.

Moravec's recording seems to be available at Amazon, although for some reason, they do not show the CD booklet cover (above) on their site.
I was tempted by those Guillou/Dorian recordings you mention. I have the old Marcel Dupré performances on Mercury.
I got it in the package with the Beethoven and Mozart discs. If he can make me listen to Mozart, he must be good ...
I also had dinner with him and his wife a couple of times when he was touring the SF Bay Area. He's a great human being as well as a master pianist!

There is another one with the same organist recorded in the same cathedral, it is called “The Great Organ of Saint Eustache” that I recommend to anyone with large full range speakers, the last track on this recording is Liszt “B-A-C-H” Fantasy and Fugue, you will definitely need a seat belt if you play this fairly loud on a wide band playback system.
