Electromagnetic speakers are linear AC motor-generators. Put current in, get motion out. Put motion in, get current out. I would agree that, on a global scale, there is no net mag field due current in the zig-zag wire pattern because, as you said, things are mutually cancelling. On the local scale, however, the mag fields across the magnet gaps must interact with the associated section of wire, otherwise the speaker wouldn't work.
