Yes, live instruments are normally compressed even more given the background noise levels on stage and peak loudness from many instruments.
To combat stage volume, in the ear monitors are popular now so that there is no need for instrument amps other than looks.
That's at the extreme end of the spectrum, and note that he does have amps, which may be DI'd to the board, or perhaps there is a speaker out of sight that's mic'd. Most players still have on stage amps and speakers, though they might not all be used. I once saw ZZ Top where both Billy and Dusty had a dozen or more Magnatone combo amps on the stage. I asked Billy if they were using them all, he said they only used two each, the rest were there to impress the gear groupies.
