...you just turn the bass amp's level down until you like the sound. There's no such thing as the exactly right level of bass. I imagine that for some recordings you'll want the bass level a little higher and on some, a little lower...and the next guy will like it at 3 or 4 different levels, so just listen and tweak that control to your heart's content.

Of course, you might find that the bass end of your biamped system has not enough level. If so, you'll have to install level controls in your UF amps(s) to reduce those levels.

Different amps will have different gains when connected to different loads, sometimes the differences can be very large, especially in case of tube amps. Add to this the fact that the sections of your speaker likely have different impedances, and the situation becomes totally unpredictable.

It is not a matter of taste or preference, both of which one can superimpose after a proper balance has been achieved.
A simple way to set the level of the bass amp and assuming the bass amp has a higher gain than the treble amp, feed the treble amp with a bandwidth-limited pink noise centered on the crossover frequency (or a warble tone at that frequency) and measure the acoustical output within a meter of the speaker with a reliable, calibrated SLM. Then feed the same signal to the bass amp and adjust the gain until the SLM read the same output.
Better would be performing a similar task with a calibrated RTA that would permit you to assess the balance of the two bands simultaneously.
