Agreed, gain differences in cathode followers would be minimal. Yes, I know Miller effect in triodes and why screen type tubes were developed. Your post would be accurate to the CF application.However, to state tubes with different gain figures would not have any effect to gain across the board in all circuits is not true. Or, that is how I read your post.
