ravel for sure, but i seem to listen to debussy more. that may only be because i enjoy piano so much and debussy's solo piano pieces really speak to me. for me the orchestrated ravel is a little more interesting than the debussy. i have the chandos series by yan pascal tortelier in which each disc includes pieces by both debussy and ravel. nice juxtaposition, good performances and recordings.(FWIW)
re sibelius, what i find interesting is that while you know your listening to sibelius, a particular piece will remind you of no others that came before it, nor will it remind you of any other composers product. sort of like beethoven, on a much smaller scale. i have the entire bis catalog of sibelius and find much of the more obscure works quite entertaining."the wood-nymph" is one of them.
