Books/writing are/is not a performing art. Movies never get performed in real time. Maybe there's an analogy to be made with stage plays, but stage plays have a lot more leeway in the timing than music does.
BTW, my wife's complaint is not with the editing per se, but rather with the fact that 99.999% of all recordings are edited (or so it seems!). So, unedited performances are a dying art form - at least on recordings. She's sorry that that's the case.
