I think that most jazz is much better recorded than rock music. Of course if you are just starting out it is hard to make recommendations, because you have not heard enough to know what style you like.Here are my suggestions, remembering this is what I like & you may not find it to your taste:
Jazz:
Art Blakey & the Jazz Messangers- A night at Birdland
Count Basie- April in Paris
Count Basie- Basie Jam
Charles Brown- anything you can find
Ray Brown- Red Hot Ray Brown Trio
Ray Brown- Bim Bam Boom
Duke Ellington- anything you can find
Ella Fitzgerald- Ella in Berlin (can sound hard, but still worth having)
The LA4- anything you can find
Grant Green- Green Street or Green is beautiful
Scott Hamilton- The Second SetSince you were a "rock & roller" I will suggest some blues albums which have a "rock" sound, but are better in my mind.
Blues
Buddy Guy- Slippin' In
John Lee Hooker - Don't Look Back (recorded in HDCD)
Little Charlie & the Nightcats- Shadow of the Blues (recorded in HDCD)
Pat Benatar- True Love (DON'T laugh, she does covers of BB King songs very well!)
The Kinsey Report- Edge of the City or Midnight Drive
