How do you explain the sonic differences in digital cables?

I think i have a limited grasp on what could cause sonic differnces in analog cables, but the issues with digital cables just totaly elude me. From what i know if the clock is recovered and the data is sampled on the recovered clock and reclocked at the other end of the jitter buffer the cables should have zero effect, but experience shows otherwise. I do not buy the error issues either, over a short distance it is easy to maintain 10-e9 or better BER (that is one error about 20 minutes or so). So what gives ?
