It transpires that I need to do some on-site live recording of a vocalist and two or three instruments. It could be in restaurants, clubs, outdoor venue but mostly in a cafe-type setting. I need to carry this to the site, around China so needs to be reasonably simple, portable and not over-the-moon expensive.
Not looking for any effects. Just uncompressed wide-band so the natural timbres of the local instruments can be heard and identified.
Would appreciate if anyone could point me in the right direction as to mics, recorder etc.

My vote would be the Korg MR1000 or 2000S. DSD at 128fs never sounded better. Put up a pair of omni mics in X/Y with the Korg and you'll find you won't long for anything else!

I noticed that you recommended using OMNI microphones in X/Y, but if you do that, you wind up with a monaural image, don't you? (But it would be really stunning MONAURAL, eh!)
Perhaps you might have meant CARDIOIDS in X/Y?
