It's a shame but Fisher Doctor can be difficult to get hold of and slow to ship product.You may want to try Terry Dewickt or NOSValves for already restored product or to restore what you find.
Tubes and Klipsch are a wonderful combo and you don't need any one particular model/brand - just something quality and not the cheapest BOTL that you can get. If you are going vintage - and that is a great option - get the unit refurb'd or you will never hear the sound that was intended and will probably be disappointed. Fisher, Scott, Eico, Dynaco, Stromberg-Carlson, Harman Kardon, Mcintosh all exist at different price points but made some nice products.
Craig NOSValves Ostby did the AF on my 500C and Mike RadioX Williams did the RF. They are both very good at what they do, as is Terry by all accounts.The 500C does sound quite nice on the Cornwalls, but kind of rolled off and boozy. Very pleasant, but not as clean as the little HF-81 I re'habbed myself. Nothing vintage about the sound of an HF-81 in even halfway decent tune.
The above-mentioned 8B is in a different class entirely.

And more generally, would I be looking for neutral sounding tubes, or should I looking for a particular house sound?
Terry Dewick in Knoxville does very nice work and for reasonable prices. He tuned up my Fisher for $200 including several new parts, I'm happy with it, it sounds better and works better too.He does SS too.
you should find both good and bad about the fisher doc through the archives. i have never dealt with him.
