Terminal 3 is almost certainly the wiper, so it will be one of the outputs. Suggest you use a signal generator or bell transformer (10 volt output) or the 6V or 5V winding of a power transformer you have laying around as a low voltage source and safely determine the relationships among the terminals.
And remember that a variac is NOT an isolation transformer--the output still has a DC path to ground.
