Generally the fish is pretty tired and brought by the side of the boat. Tagged and hook removed.
Often they are held by the side of the boat while in gear to force water through the gills to re energise the fish a bit before letting it swim away.

Bigger fish are harder to handle and the hook can often be left in, but stats seem to show the hooks get shed by the fish.

Unfortunately big fish as big as this one sometimes die. I don't know the stats, but there's a +90% survival rate.....
