RE: EV 30W in open baffle config.....any thoughts?.

An OB application of the EV 30W's would be obviously non-optimum as you can see by the lack of advice here of anyone trying it, but of course have at it if your willing and keep us posted as to the results. Anything you do with the 30W's is going to be large, but you may consider an isobaric push pull configuration with the 30W's mounted cone to cone/face to face in a single cabinet. The advantage of this configuration is that you can use a box half the size of what you would need with a single driver. EV recommended that the 30W be used in a 23 cu. ft. vented box, and you can imagine if a box about 11.5 cu. ft. would fit in your space. At the 16 Hz/C1 on the pedals of a large pipe organ recording there's only one driver left standing and that's the EV 30W in my experience. In the present time frame Fostex made a 30" driver but I've never heard it.
