How does one find great headphones unheard?

Looking for a nice third pair of headphones. Currently have the AKG K240 and Sennheiser Momentum II. Years back did listen to a few at Guitar center where i got the K240. I picked those over a pricier pair of Beyerdynamic I listened to (forgot which model) and the sales guy seemed shocked by that. Would like something a good step up from the AKG and the Senn. Wonder if i just didn't like the Beyer house sound. SO MANY models to choose from like all the Senn 5** and 6** models. Any suggestions? I'm ok with closed back, what is the advantage of the open? Been looking at the HD569 and HD599 so far.
