I participate every year in John Folse's Boucherie and I was on the porchetta station one year, it was one of the best things I have ever tasted. The two things I would change from the recipe in the video would be to use fresh chopped garlic instead of the minced garlic in the jar, and as I mentioned, I would use shoulder instead of loin.
