...yesterday, I bought ~120 lbs of pork butts and 42 lbs of pork bellies--dirt-cheap from a food-service vendor. $1.59/lb for boneless butts, $1.29/lb for the bellies. He HAD bone-in butts for $1.39/lb, but I didn't get back to him quick enough--BBQ joint took them all for their pulled pork--bastids!
Grinder parts are soaking in quat sanitizer right now. Gonna make some sausage. Got some seasoning and casings from the local butcher, downloaded a couple recipes from Alton Brown and Emeril--looking for something from Justin Wilson. Doing breakfast sausage, and going to attempt chorizo, and andouille. Perhaps should check to see if Paul Prudhomme has anything out there.
If I can get it all ground and seasoned today, I'll be happy. Smoking/curing the chorizo and andouille can be a weekend project!
