I can't stand making turkey. This is a 10 pound boneless pork cut in 2 to reduce the cook time. Have it set at 250, rubbed with fresh garlic and spices. Potatoes underneath will get crisp in the juices.
I will say the few times I ate there, I was impressed with Fogo. The self service "salad bar" alone is quite an accomplishment, and If I remember correctly a pretty good deal.
