...and by "old", I mean 100+ years-old, I have learned (mostly, the hard way) to just double the projected budget for both time and money before even starting demolition. The minute you crack a wall open, you're bound to find a "surprise" in there, and terms like "level" and "square" become relative, not absolutes.
