Wine help requested

Mrs scm and myself are not big wine drinkers, and due to our lack of knowledge most of the wine in our cabinet was given to us rather than actually purchased by us. Tonight for Dinner I decided to experiment a little and open a bottle. Big mistake! It had a very distinct smell of vinegar to it, and it went right down the drain. With the next bottle, although the smell was not as immediately noticeable the results were similar. The last bottle I actually managed to pour and take a sip, but, yup- no good.

So I gave up and cracked a beer.

So, right now we have four bottles of wine left in the cabinet, none of them newer than 1990, and I'm wondering whether they will be any good w/o having to open them up. I thought all wines aged and "improved" with age, but I'm learning otherwise.

So which types of wine are supposed to be aged before drinking, and which types are best consumed "new-ish"?

Here's what's left in the cabinet (w/o mentioning brand names):

-1987 California Sauvignon Blanc
-1989 Bordeaux Blanc
-1999 Merlot
-1990 Bordeaux ("Rouge"?)

Drink 'em? Dump 'em?
