Had to bring the ribs in as a huge storm hit, temps dropped, about the time I needed to restoke the smoker, so 3 hours over pecan wood and lump charcoal and 2 hours in the oven. The chicken was de boned and stuffed with shrimp and rice. The boy bought it at some cajun joint in So. La. and bought it up here for their visit
