A Louisiana native here...

I know people that love this. I grew up in the city that held (and still holds) the annual world championship gumbo cookoff. (I would not go back or visit there, however, one of the highest crime rates in the nation... they post billboards begging people to stop killing one another "start chillin and stop killin") There is no potato salad at the cookoff... :)

I used to say people who did that were just making gumbo that was bad edible. I think it is personal preference, but I never liked it in good gumbo. It just seems to ruin it, IMHO.

Honestly, if you get Gumbo outside of Acadiana, it is not "true" gumbo. Gumbo from the Baton Rouge / New Orleans area is _totally_ different than the gumbo in Acadiana. (I am from Acadiana, and I prefer that style... New Orleans gumbo has been "european-ised" and is strange).

Just my $0.02, eat what you enjoy.
