"Would 12AU7 work?" NO! Gain is too low and the type is non-linear. IMO, the only audio roles the 'U7 is suited to are cathode follower and "concertina" phase splitter.
"Is that CCS absolutely essential?" YES! In an "El Cheapo", loop NFB is applied to the LTP's non-inverting grid. The CCS forces symmetry upon the 2 triodes of the LTP.
"For the power supply I am will retain the current arrangement that gives about 420 volts at tops. It does have a neg bias tap." That tap is OK for an O/P tube bias rail (C-). You will have to construct a negative rail (B-) that can comfortably provide the 12 mA. needed by the 2X LTPs.
