Option 2 is how I would do it. There was a very good article years back in Audio Amatuer magazine on how to make your own high quality interconnects. This is how they suggested cables be wired. I have used this method with good results.
1 wire to center pin, 1 wire and shield to ground on amp input end. On source end; 1 to center pin, 1 wire to ground . Shield is left floating ; "unconnected".
The floating shield wire on the source end , acts as a "drain wire", similar to an antennea, picking up stray emf signals and shunting them directly to ground. Works well IMO.
