I believe what you are describing could be described as slew rate, the speed at which the amplifier can get to one voltage to the next. It's kind of related to frequency response, but not entirely.

Off hand, I can't see why a DC coupled amp would inherently have a better slew rate than a cap coupled one, but I am open to an explanation. Transformer coupling is another issue.

By the way, I have designed/used DC coupled amps. While they work in theory, when things go wrong (loose driver tube, different warm up characteristics between tubes, etc) it can be disastrous. I lost a 300B to warm up problems.
