You're being sidetracked by the 'scope display. The probe is an extremely high impedance point, and it will pick up all kinds of junk when not connected to the circuit.How bad is the hum? Have you tried different 12AX7s? You might have to hand-select the best one. Is the filament balanced to ground? If nothing else works, consider a 6267 pentode at the first stage.
