I have used current reg on 37 heaters as well as AC, in a preamp/headphone amp, and did not find much benefit to the DC. Stated another way, any hum problems I had were not coming through the heaters.It would surprise me if you needed a grid stopper on a 27, although I have used them. If it sounds better without it, then your path is clear.
I like your idea - listen a while and give the little transformer a chance to break in.
