In my experience, few 2A3s (or 300Bs for that matter) are so well balanced that a center tap will keep the hum acceptably low with AC on the filament. A hum pot that can be adjusted for each tube will usually give you 6dB or more reduction in hum - in which case there's no connection to the center tap, and it is of no use.Incidentally, on a normal power transformer, the 2.5v winding will have only a few turns, maybe 10 or so. Getting a center tap that is really accurate is not that easy...
