People whose ears I trust have told me that 3 channel stereo (with a center channel) is superior to 2 channel stereo, filling in information that is missing with just 2 (the equivalent of the 3rd microphone used in the early Mercury recordings).
They also say the most realistic at recreating the live musical event is a good 5.1 channel system in a good room playing a good recording.
