I'd suggest skipping the DAT recorder and going directly to hard drive. DATs do not have a very good shelf life and most machines are quite jitter prone.As to mics, the component having the largest effect on what you record, Danish Pro Audio (formerly B&K) make the best I've ever heard. Use the small diaphragm version for the best staging.
If DPA is too expensive, Earthworks makes a cheaper alternative. (See http://www.earthworks.com )
Keep in mind the relationship between your speakers: they are set up in an "array" across the stage with a certain distance between them. If you try to match this array with the mic positions you will be startled by how realistic a stereo image can be portrayed by your system.
