I just bought a Tascam DP-01 a few weeks ago and have been having fun with it. Get one of those with a basic 4-8 channel analog mixer, an old Stereo receiver makes a good amp, toss in a set of speakers and it could be done for about a grand.
The DP-01 takes some time to figure out, but once you do it is great. I used to just run the mixer into a tape deck and thought I would upgrade to a 4-track, but after seeing the DP-01 I was sold. You can skip the mixer and directly record into the DP-01 if you want, but it makes miking cabinets tough as it does not have balanced inputs. The DP-01 plugs into the USB of any computer running windows NT and newer software and then you can burn CDs. Don't bother with the version with the built in cd burner if you have a computer anyway with a cd burner on it.
