2 small amps bridged or 1 stereo amp? which is better

I have two options of powering my subwoofer, 1 is to buy 2 PLX1602 rated at around 1000watts bridged into 8ohms to power my stereo subs or just buy 1 PLX3402 at 700watts. which would produce a better quality bass the bridged high power or just keep things simple and run stereo.
