Joey, I can't help you a lot, but maybe a little. It sounds like you need a decent mixer. Mackie and Yamaha make very nice 12-16 input mixers at a reasonable price, and accept mic and line inputs. Firewire and other digital outputs are available on them for going to your computer. You can run outputs directly to your monitoring system or to your computer, or both depending on how you configure things. Tracking software could be something like Cubase or Cakewalk or similar.
Once you get all your connections and levels worked out, you'll have minimal ongoing cable hassles, and will largely just be pushing buttons or clicking the mouse.
One more thing... buy good cables. Heavy jacketing is a ruse if the price is $7.99. (The best cables I have are the ones I meticulously made myself with high quality parts.) I'm just sayin'.
