I tag compositions or works as albums, so that if a CD has Symphony Nos. 5 and 7 on it, they become two albums. Then it is easy to select the composition that i want to play, add to a playlist or sync. When/if Apple allows "works" to be handled like albums, I may consider changing my approach.
A long time ago I started tagging the composer in the artist field, with the soloists, conductor and orchestra, etc. going into the comments field. If I have multiple recordings of the same work, I add the conductor to the "Album" name (e.g., Symphony No 2 in D Minor--Bernstein). I could probably stop doing this now that there is a separate tag for composer. I might go back and change this if Apple ever allows me to set up browsing by Genre (e.g., baroque, romantic, 20th century, etc.) > Composer > Work. Until then, I won't have the motivation to go back and recode the tags on a large library. This is not very elegant, but it works the way I like it.
