You could establish a mirror set (RAID level 1). This can be done in software or hardware with a special disc controller. Some motherboards come with RAID controllers on-board.
Or if this is a one-time backup and the 1 TB will be stored in a safe place offline, just "copy" to two folders as you described will be fine.
