Sorry, no experience with the DSP 360. However, if you like your HD 600s (pretty likely!) then I'd vote that you unpack the new phones and compare. The HD 600s should be a wonderful reference.
Digital Signal Processing can be a wonder in terms of presenting more apparent width and depth in the sound field. What some people report, however, is that there are other unintended sonic byproducts of doing this. I guess that's the thing to listen for... if the quality of the sound is less 'pure' or in anyway distracting for you compared to the HD 600s.
Perhaps you can report back after giving them some listening time.
