It depends a bit. If your headphone cable splits before going to the ear cups, you sure will be happy that you have 4 wires to use.
If you have a headphone where the wire only enters on one side (one earcup), then you can probably omit one wire.
If you would like to wire for a balanced connection, you will want to use all four of the wires regardless.
I would also connect the shield at the plug end.
