Generally, the main part is rewiring the power transformer but the exact steps are dependent upon how the connections are made in the power supply. I assume you've already got the IEC power cable connector issue solved already.
You'll also need to understand that when you contact Mac about this, they're put in a tough situation. Any gear they ship to Europe must meet CE certification standards much as they need to meet UL standards in the US. They cannot be in the position of having even consulted on a piece of gear that doesn't meet it. I've worked at similar smaller companies that ship world-wide from the US and they all have the same issue with re-purposed gear so its a common problem.
This is the reason I suggest you get a copy of the service manual yourself and find a local guy to do the work if you can't.
