Pretty sure there's not a single right answer.

Assuming cost is not the limiting factor, it really comes down to personal taste.

If it were me, I'd probably opt for a restored pair '63's with a good/solid pair of stands. Although there's a certain charm about the '57's that makes them so hard to ignore.
