I've been running a set of Mac MC-75s, recently restored, with my rebuilt Quad ESL63s - that means new panels.I've been using the 8 ohm taps but tried the 4 ohm taps briefly. Frankly, there wasn't that much difference but mainly in the bass is where I could hear any difference. For the most part, I don't run the hard so I doubt I was pushing the limits of the amp or the speakers.
Short answer: Stay with the ones that sound good to you.
A bit more discussion: Don't forget that the impedance taps on the Mac autoformers are there to ensure that you can get the best power transfer from the amp to the speakers. For this reason, then, you should try either the 4 or 8 ohm taps.
